I measured 185 cafés across 10 central neighbourhoods. 3 open before 6:00. 18 open before 7:00 — and exactly 1 of those is independent. If you are up early in Tokyo, you are drinking chain coffee, and that is not a matter of taste but of arithmetic.

Before 7:00, take the chain. There is no independent alternative in nine of these ten neighbourhoods, and Doutor at 6:30 is a perfectly good cup. Trying to find something better at that hour is a way to spend forty minutes and end up at Starbucks anyway.
7:00 is when it becomes a choice. Verve in Shinjuku, Depot at Tokyo Station, Kanda Coffee-en in Kanda. Not many, but they are real shops.
8:00 is when Tokyo actually opens. 57 of the 185 are open by then, including SARUTAHIKO and Blue Bottle in Ebisu, FUGLEN in Asakusa and GLITCH in Jimbocho. If your schedule is flexible, waiting until eight roughly triples your options.
The pattern is not laziness. Chains staff the commuter rush at the stations; independents open when their own customers turn up, which is mid-morning. Ebisu is the clearest case — two cafés before 8:00 in a neighbourhood with some of the best coffee in the city.

How was this measured?
Each neighbourhood was queried through the Google Places API for cafés and coffee shops within a fixed radius of the station, and the Monday opening time taken from each venue's published hours. Twenty results per area is the API limit, so dense neighbourhoods are sampled rather than exhaustive. Last collected 12 August 2026.
